T(H lead the real estate search, design, and build of the first-ever North American Castello Cheese Store. On the execution side, our experienced team managed day-to-day store management including permitting, retail certificates and licensing, and recruiting experienced food-savvy staff. The store was open for 3 months and included custom programming such as interactive tastings, mini-workshops about entertaining and cooking with cheese, live sculpting exhibitions transforming cheese into works of art, and private events for consumers and customers hosted by celebrity Chef Michael Symon.
